Thankful thoughts and sleep

Workout – yet to happen.  Jillian for sure.  and probs some running of some sort.  hubs got the gym this morning.  I got the bed.  until 6:30.  with a snuggly 5 year old.  snuggle is an understatement.  she smothers.  and then smothers some more and then she snuggles.  I love it. 

I am one of those people that thinks every that happens in life, happens for a reason.  there is always something to be learned and to make us grow from, whatever the circumstance may be.  like my son not sleeping past 4 am for 3 months.  prior to that, I would have minor major anxiety about not getting up by 4:45am to get to the gym before the craziness of the day.  until the sleep steeling monster decided to rip my mornings away from me and we would wake up the crack of dawn.  then sleep became more important than the gym at 5 am.  I am SO thankful that he sleeps now.  we have had about 1 full week of good sleep.  The new, sleeping Katie has less anxiety and more appreciation for the good things sleep does for me.  instead of panicking that I don’t get to the gym in the morning, and when am I going to get my workout in, I am thankful that I get to sleep.  I definitely think it started throwing my body completely out of whack.  I started gaining weight, for no reason.  I was miserably cranky all the time.  my husband would say that has nothing to do with lack of sleep.  I would say if you don’t have anyhthing nice to say, dont say anything at all.   anyway – that’s my thought on the importance of sleep.  I get it now.  I was happy to stay in bed until 6:30 this morning and I didn’t have an ounce of panic about not getting my workout in.  I will fit in it today at some point.  sleep does a body good.  and I need a good nights sleep once every three months or so.  thanks Luke for working with us. 

Quick funny – I took this picture yesterday –

and it broke my phone.  as soon as I took it, my phone did this weird thing and shut down and I couldn’t get it back on.  when it finally came back on, it tried to erase all my pictures.  I saved it.  I don’t know how, but I stopped the madness.  guess it didn’t like that mug.  it must be the ever growing vein or the ginormous forehead/nose combo that upset the balance of my phone.  I haven’t decided.  no more pics of my face.  done.  for today.   

I’m also thankful for another fantastic dinner that was served last night.  and my three children to help me make it.  last night I put Luke in charge of chopping the vegetables.

I have cut up so many vegetables in the past two nights.  I’m done.  cutting vegetables.  for the rest of the week.  thankful for a freezer full of frozen veggies waiting to be roasted.   

The finished product was Sweet Potato and lots of other stuff vegan echiladas.   They might technically have a different name on the blog I got it from – Oh She Glows.    

I must say - I think my food pictures are improving. I don't think this one makes me want to puke.

It was topped with this AMAZING cilantro avocado cream sauce.  I LOVE cilantro.  love love love it.  could swim in a pool of it.  wouldn’t that be fun.  so this was exciting to have it on top of enchiladas.  super exciting.  more exciting than all of my fun Target finds yesterday. 

I am not going to put the recipe on here word for word for 2 reasons – 1. because I am too lazy to do that.  2. it’s already typed up for you on the other blog.  check it out. you can click on the link above.  I made a few of my own changes – and they turned out fantastico.  I am on a roll this week.  here are a couple of pictures to make your mouth water though.  and this is a super healthy dish.

I thought if you put cheese on it, the kids are sure to eat it. not true. but they scarfed the avocado.

This dinner was kind of time consuming to make.  with all of the veggie cutting going on and my lack of preparation that should have started at breakfast time.  that just about took up the entire evening.  I was too exhausted to even turn on the TV.  hubs and I had an old couple night.  who am I kidding.  we have an old couple night every night.  he sat in the chair and read.  I sat on the couch and read played on the computer.  too exciting to really express in words.  darn good times.

     

What is more important to you – sleep in the morning or getting your workout in?

  1. I love cilantro, too!! I’m going to make a BBQ chicken pizza on Sunday, and I’m most excited about all of the cilantro that will go on it!

    And sleeping in vs. a workout … it depends on what time in the morning we’re talking. At the moment, there’s no way I can workout on mornings that I have to go to work … I’d have to get up at 4am, and I just can’t deal with that. But I can wake up at 6 or 7 on a Saturday for a workout and be happy!

  2. I was just talking about Cilantro! I LOVE it too. Just got this cilantro salad dressing at Trader Joe’s and was licking it up on my salad today. It made the whole thing taste like cilantro and that was JUST FINE WITH ME!!

  3. Definitely love getting my workout in early am, but if I’m getting run down I’ll go for sleep. Today Kevin had to leave as soon as I got back from the gym so my run is waiting for tonight when the kids get tucked into bed. Normally I would dread this, but I’m trying instead to look forward to it as away to unwind from the day.

    Ok, so can you talk to us about your eye makeup and how you apply so perfectly?! I have no technique!

    • Doing a “how to” eye makeup post tonight!:-) I have such a hard time working out at night, at home. I could maybe do it if I went to the gym. I used to work out at night all the time. now, it’s the last thing I want to do! good for you for having a good attitude about it:-)

  5. I am pretty sure the human body doesn’t need anything other than avacados and cilantro. That TJ’s dressing if fab! I eat it with fish, black beans and cilantro rice. Delish!

    If I get to bed by 9 I can wake up before 6 but I love my sleep. I am luck enough to be a stay at home Mom so I generally can rearrange my schedule to get a mid-morning workout in if I need a few extra zzz’s but my morning starts at 6 am to get my middle schooler off and usually try to get a trail run in between his drop off and the before school (choir, chess and every other before school club he can sign up for) drop off 8:15 for my 4th grader and then grab a shower before dear daughter is off to school at 8:45. THEN I come home and deal with the baby!
